'With just a few ingredients and a little time you will be able to make that fresh Old Fashioned Fudge that you find at those speciality stores. This video is made for the professional as well as the beginer. Enjoy making and sharing this.  2 cups Sugar ½ cup Cocoa (Unsweetened) 1 cup Milk ¼ cup Butter 1 teaspoon Vanilla  Combine sugar, cocoa, and milk. Cover until the sides and top sweat causing all the sugar molecules to wash down the sides of the pot. Remove the top and continue to cook until the mixture reaches softball 224-238 degrees. Take it low and slow (Low Heat and Slow in time). Do not stir the mixture. Stirring will cause the mixture to crystallize. If it crystallizes remove from the heat and washout the pot and start over.  Once the fudge has reached the desired temperature poor into a mixer with a paddle attachment.  Start mixing on slow as the mixture is very hot.  As it cools turn the speed up to medium. Let mix unit the mixture reaches 110 degrees and add the butter and the vanilla. Keep mixing until the temperature reaches 80-85 degrees. Turn out on to the counter/Stone/Parchment. Kneed to shape and smooth.  Let cool to room temperature and wrap. Serve with a smile!   It is said that there has never been an original recipe that has had so many revisions to make it easier.
